For the super low resolution stuff, sometimes Gaia-CG does a better job (IMO) making something watchable. For example, scaling 320x240 to 1920x1440

And since Video Enhance AI seems to shy away from compression on the upscaled mp4, I usually run the videos through ffmpeg to convert them to h.265 so their file size isn't so ridiculous.
ffmpeg -i "upscaled-video.mp4" -c:v libx265 -x265-params keyint=30:min-keyint=15 -preset medium -crf 24 -tag:v hvc1 -c:a aac "upscaled-video-h265.mkv"

What kind of GPUs are you guys using? I want to convert longer stuff but not sure what GPU to get. Maybe an 8GB Nvidia.

Don't convert, just use cut into small clips and/or join the small clips into a new file or leave as separate files.. The reason it takes so long is you are re-encoding the file. There are some free opensource programs that can accomplish this really quickly. The key is to be able to cut/join WITHOUT having to re-encode everything.
