What movie has Nicholas Cage in it and he works on an ambulance. He looks and stares at a pregnant woman and she laughs and says, "soon you'll be coming for me?"

I think it could be Bringing Out the Dead where Nic Cage plays a paramedic. But I can‘t remember the mentioned scene in particular

I liked that movie a lot, weird in a good way. I remember that scene, he then hallucinates and sees her as the dead girl who haunts his psyche.

as a medic in NYC, yes there is alot of feels in that movie...they actually had all the actors riding NYC ems ambulances so they could better understand the roles and all the weird shit EMS does.
