I find that if you dont look at your phone people are less suspitious. I have an app that will allow me to take a photo every few seconds so i just turn it on and hold it at my side pointed at the lady and wait.

Looking at your screen is a huge no-no. You have to act like the screen isn't on at all, and conceal the screen from view of her and others.
